Mother's Day Tabouli Salad

 

 

Eggs

 

1 cup water
11/2 cup fine cracked wheat
1 cup minced fresh parsley leaves
1/2 cup minced fresh mint leaves
1/2 cup finely chopped yellow onion
3 tomatoes, diced
4 Persian cucumbers, seeded and diced
3 tablespoons olive oil
2 tablespoons lime juice
Juice of 5 tangerines or 2 oranges
1 teaspoon sea salt
Pepper to taste
1 tablespoon allspice

 

In a large mixing bowl, pour the water over the cracked wheat and cover, let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped herbs, vegetables, salt, pepper, and allspice and toss with the mix. Combine the oil, lemon juice, and tangerine or orange juice. Watch out for not getting seeds in and mix again. Add to wheat mixture then mix well. You may want to add more spice to your liking. Then chill for 15 minutes in refrigerator. Serve and enjoy!
